Smoky Tomato Sauce
Prep: 10 mins Cook: 20-30 mins
Useful for pasta sauce or as a base for additional ingredients.
Ingredients
1 tbsp olive oil
1 onion - finely chopped
2 cloves garlic - minced
1 tin chopped tomatoes
150ml chicken stock
1 tsp smoked paprika
1/2 Tsp BBQ sauce
Salt and pepper
Method
Fry onion in the olive oil for about 5 mins until soft. Add the garlic and fry for 1 minute more.
Add tomatoes, paprika, BBQ sauce and chicken stock and bring to the boil.
Allow to simmer vigorously until reduced to the required consistency.
Season to taste.

Bircher Muesli Recipe
Ingredients
100g Oats
200ml Almond Milk
60g Yogurt (2 tbsp)
30g Raisins (I use jumbo ones)
20g Linseed with sesame, blueberry and raspberry
Dried Cranberries - handful
Almonds - Small handful, chopped
1 tsp Ground Cinnamon
Mix all the ingredients together and put in a *beautiful container in the fridge. Leave overnight.
In the morning, take out two tablespoons of the mixture and add extra almond milk to make it the right consistency for you.
Top with any fresh fruit that you like. I use blueberries, strawberries, pear, apple, banana etc...
* It doesn't have to be beautiful, but it will taste better if it is ;)
Four Bean Chilli
Four Bean Chilli Serves 4

Ingredients
2 tablespoons olive oil

1 red pepper, chopped
2 tbsp tomato puree
1 tsp ground coriander
1 - 2 tsp chilli powder
1 tsp ground cumin
1 tsp Smoked Paprika

450g canned mixed beans
300ml (1/2 pt) vegetable stock
1 bay leaf
salt and pepper
When I made this I used 1/2 can each of red kidney, pinto, cannellini and borlotti beans. You can use any beans you like.

Method
Heat the oil in a large saucepan.
Add the onion, garlic, red pepper, coriander and chilli powder,and fry on a low-med heat for approximately 5 minutes or until soft,stirring occasionally.

beans, vegetable stock, worcestershire sauce, soy sauce and bay leaf. Season with salt and pepper.

Bring to the boil, then reduce the heat and simmer gently for 30 minutes.
Can be frozen. Tastes even better the day after!
